The Casa Cruz Palate

Juan Santa Cruz opened the first Casa Cruz in Buenos Aires in 2004. Here he reflects on nearly two decades of creating menus for his restaurants.

”It’s been nearly twenty years since we created the first Casa Cruz in Buenos Aires. While a lot has evolved in that time – and since we’ve opened Casa Cruz in London and New York – one thing has remained the same, and that is our commitment to the quality and spirit of our menu.

”We always wanted to showcase the vibrant and diverse flavours of Latin cuisines, while also incorporating elements from Mediterranean regions that share the same ethos. As time has passed we have been inspired by new cuisines that have sprung up in South America, Spain and Italy. With our team of chefs we have tried to constantly push the boundaries of traditional recipes, infusing their own creativity and innovation into each dish. One thing, however, has always remained the same, which is our unwavering commitment to quality. We only use the highest quality ingredients and pride ourselves on working closely with our suppliers to ensure that everything we serve is fresh, beautiful, bursting with flavour, and most importantly, cooked with love.
